Die cutting on a flatbed press

I am just trying to dus off the memory of how to correctly die cut on a flatbed press. I remember taking off the roller to protect them from the actual cut, buy as far as that I am drawing a blank. I am printing on an Asburn ( German made, simliar-ish to the more familar vandercook)

Any suggestions would be great,

This is best done with a die cutting jacket. It is attached like a drawsheet to protect the cylinder face.
