Hard woods, like cherry and maple for example. But people with more knowledge will be able to give you more details. There’s a whole process in preparing the wood specifically for making wood type. The Moore Wood Type website has some very good insights.

End-grain slabs of sugar-maple cured for a long time to remove any humidity before cutting. Larger type-sizes were made from side grain.

The slabs were then sanded to the correct height and finished to a shine with boiled linseed-oil, shellac and pumice. Directions for the latter process can be found on woodworking websites.

The hard part is likely finding end-grain slabs that aren’t glued together from small pieces.
